My first memory of Spinach and Artichoke dip involves eating it aboard the Queen Mary at Long Beach with a nice cold drink and the every delightful company of my parents. It was served warm and came with home-made tortilla chips and somehow the combination of the wood-panelled Observation Lounge, the mid afternoon Sun and the delightful food has stayed with me ever since.
It’s odd what makes you remember things, isn’t it? I often find that food is a wonderful trigger for a certain place or time and when I smell or taste some things I am instantly transported there in my mind. Whilst writing this sentence I was reminded of the Dole pineapple stand at Disneyland, where they serve the most amazing Pineapple Whips, which is another one of “smell it and re-live it” triggers.
I can’t say that my parent’s dining room had quite the same ambience and I’m not sure the recipe was quite the same either, but trust me when I say this is an amazing dip and is guaranteed to bring happiness to all who eat it!
