Single Serving Dutch Baby (Puff Pancake)



We make Dutch Babies on a regular basis around here. It's everyone's favorite so I usually make a large batch in an 11x15 pan. But the other morning my son was the only one heading out the door to school (the other kids were sick) and he asked for a Dutch Baby. I put the 8" cast iron pan in the oven, got out my Magic Bullet, and hoped that my proportions were okay. Turns out they were! These are super fast to make and a fun treat. I kinda like them better than the original recipe in the big pan.

Single Serving Dutch Baby

2 eggs
1/3 cup flour (I use Spelt & millet but this is a great dish for just gf flours)
1/3 cup milk
a couple dashes of salt
1 tablespoon butter

Put an 8" Cast Iron Pan in the oven and preheat with the butter in it. Set oven temp to 400 degrees Fahrenheit. While the oven is melting the butter and heating the pan, put the eggs, flour, milk and salt in a small blender container and blend for 30 seconds. Once oven and pan are hot and the butter is melted, pour the egg mixture into the pan. Bake for 8-10 minutes. Top with whatever you like! I love canned peaches (I get the kind sweetened with fruit juice), maple syrup and a sprinkling of coconut/palm sugar. Enjoy!
