Peanut chutney is a healthy chutney made with peanuts or groundnuts.  Coriander leaves added to this chutney gives a fresh look and gives a good flavor to the chutney.  This chutney goes well with idlis, dosas or uthapams.  When refrigerated, it stays good for 4-5 days.  This is also a protein rich chutney and made without the use of coconut.  This chutney though made with very few ingredients is very tasty and creamy.  Do try this chutney for a variation from the regular chutneys made.

Servings : 4  persons

INGREDIENTS

Peanuts/Groundnuts – 1 cup

Coriander leaves – 1 cup

Green chillies – 2 nos

Garlic cloves – 2 to 3 nos

Salt to taste

HOW TO MAKE OR PREPARE PEANUT CHUTNEY RECIPE

PREPARATION

Dry roast the peanuts until it turns golden in colour.  Let it cool down completely.  Then  remove the skin of the peanuts and keep it aside.

METHOD

Take a mixer grinder.  Add the peanuts, green chillies, garlic cloves, coriander leaves and salt.  Add little water and grind to make a smooth paste.  Remove the chutney in a serving bowl.

Serve Peanut Chutney with idlis, dosas, medu vadas or pakoras.

NOTES/TIPS

You can make the chutney to a smooth or medium consistency as required by you.

Add little ginger for a nice  flavor to the chutney.

You can add little tamarind at the time of grinding, to give a tangy taste to the chutney.
