I just love this recipe is delicious and doesn’t take all day to make. I did it last year for my husband birthday and we enjoyed so much.
INGREDIENTS
- 1/3 tsp cayenne pepper
- 2 ounce olive oil
- 1 pound boneless chicken breast cut in pieces
- 2 tbs Cajun spice blend
- 1 1/2 tsp salt
- 1/4 black pepper
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 6 ounces shrimp ( shell, vein and tails removed)
- 1 pound linguini pasta
- 2 medium chopped tomatoes
- 1 sliced green bell pepper
- 1 sliced red bell pepper
- 1 sliced yellow red bell pepper
- 1 onion sliced
- 1 1/2 cup spice chicken seafood broth
- 1 tbls chopped parsley
INSTRUCTION
- Preheat oven to 375degrees
- spray baking sheet with olive oil
- place the chicken breast inch apart and spray each with cooking spray, sprinkle 1 tbs CAJUN over them
- bake 20 to 30 minutes
- Meanwhile prepare pasta following the package direction
- In a bowl, combine shrimp, and 1 tbs Cajun seasoning, mix well and set aside
- In a saute pan, heat 2 tbs oil over medium heat and saute for 1 minute, add bell peppers and onions. SAUTE UNTIL TENDERS
- Add shrimp and tomatoes. Cook for additional 2 minute
- combine the shrimp mixture with the chicken add 1 1/2 spice chicken seafood broth.
- Mix pasta with with remaining 2 tbs olive oil, 1 tbs Cajun seasoning, cayenne pepper, black pepper, paprika, parsley and stirl well
- Spoon half of pasta with chicken shrimp mixture with pasta. Add additional Parsley
- REPEAT FOR THE SECOND SERVING
