Strawberry & Peppered Steak Salad
Salads are so light and perfect for spring weather. Mixed with fresh fruit and protein, they are a great way to not only get your macronutrients in but your micronutrients, too! This salad has the perfect amount of healthy fats from the fresh avocado, and it provides a boost of antioxidants from the strawberries. It’s a great staple meal with endless options for toppings. Get creative with this one and add some pickled red onions or blue cheese crumbles. Delish!

- 4 ounces grilled steak
- 4 cups mixed greens
- 1 ounce mediterranean feta cheese
- 1/2 cup strawberries, sliced
- 1/2 avocado, diced
- Optional garnish: sliced almonds
Homemade dressing (makes 8 servings):
- 1/2 cup pomegranate balsamic (regular will work fine too!)
- 1/4 cup olive oil
- 1-2 teaspoons apple cider vinegar
- 2 teaspoons minced garlic
- 1 teaspoon honey
- salt & pepper to taste

Preheat grill on medium to prepare steaks.

Season steaks with pepper & steak seasoning.

Grill steak to your desired cooking temperature.

Thinly slice steak and measure out 4 oz. (2 oz. per salad)

In a bowl, mix together pre-measured mixed greens, strawberries, feta, avocado and steak. Drizzle ⅛ serving of balsamic dressing.
