5 minutes with John Burton Race

Renowned chef John Burton Race has just embarked on an exciting new challenge at The Grosvenor Hotel Torquay. While the rest of the hotel is set to receive a full refurbishment; John will play an integral role in the kitchen redesign and menu planning for 2017. A long time Devon resident, it is hoped that John Burton Race will bring some ‘Michelin magic’ to the Torbay hotel, harnessing the best of what our county has to offer. Keen to find out more, The Devon Foodie got the lowdown from the man himself:

What attracted you to work with the Grosvenor Hotel?

The challenge. Plus of course I love Torbay.

What kind of dining experience can guests expect with you overseeing the restaurant?

Fresh, local, seasonal produce cooked with a little finesse but not pretentious or too expensive.

Can you explain the concept behind your other new venture, Two Grumpy Chefs?

Grumpy chef is more of a part time very casual fun thing to do; it’s all about myself and my business partner cooking for private functions. In people’s homes or for very special events.

What is the most exciting venue or place you’ve cooked in to date?

Working and cooking for Raymond Blanc was a brilliant experience. My consultancy in Barbados and Mauritius were both amazing.

What advice would you give a young person just setting out on a career in your industry?

Find the best restaurant and the most accomplished chef and learn as much as you possibly can from that place and individual before moving on to something better.

What else are you looking forward to in 2017?

2017 I’m going to totally preoccupied with my endeavours for the Grosvenor Hotel and the Richardson Group. It’s going to be tremendously challenging and very exciting and I cant wait.
