Frozen Veggies Egg Frittata

Some of you should have noticed by now, how much I love egg frittatas, from the frequency of making them: Onion Egg Frittata, Chive Egg Frittata, Gouda Cheese Egg Frittata and today, this super convenient Frozen Veggies Egg Frittata.


All you need to do is season and whisk up the eggs; and in a blink of an eye, a dish that takes you a long way - side-dish, appetizer, snack, sandwich filler worthy any time of the day.





Frozen Veggie Egg Frittata
Ingredients:
1/2 pack (2 servings) of frozen veggies (your choice of green beans, carrot, corn, bell pepper, broccoli, even spinach will work)
6 eggs, gently whisked
Pinch of curry powder, turmeric, black pepper, dried oregano to season

Directions: Preheat oven 350F. Spread the frozen veggies into baking tray, add eggs and bake about 20-30mins till eggs are cooked. When done, slice the frittata into six freezer-friendly rectangular pieces (equivalent to six eggs we started with).
