Best and Simplest Ham and Cheese Quiche

Some things are just IT for me, and quiche is one of those things.

I reminds me of my mom cooking for me on cold blistery days.

It makes me feel loved, special and fancy all in one. When I take a bite, the wafts of smells and scents tantalize my every sense, and yet I know that every delicate crumb that touches my lips is nourishing my soul and I feel not an ounce of guilt when I’m eating it.

Eaten with a bowl of soup, a salad on the side, or all on its own, it’s just one of those things that helps me to STOP. BREATHE. and ENJOY.

Thats one amazing food.

I imagine that my children might feel the same way, because although they are celestial angels in human bodies ;/ , they can get a bit testy around lunch time. All the critiques and growling comes out and they will give me an earful if they are dissapointed with what is being served.

However, I think everything I serve is amazing.

And even if it isn’t, I still think it’s amazing.

BUT THIS. THIS. IS.

It’s really one of those dishes that is simple comfort food. Loved and cherished by all. And never shall you meet a child (A Woo Child anyway) who will turn up their noise at this delectable meal.

EASY AND QUICK HAM AND Cheese QUICHE

Ingredients:

1 ready made frozen deep dish pie crust

1/2 onion, diced

4 eggs, beaten

1 cup half and half

1 1/2 cups sliced and diced ham luncheon meat

1 cup mozzarella

1 cup colby jack cheese

1 deep dish frozen pie crust

Directions:

1.) Preheat oven to 375 degrees.

2.) In a skillet, heated to medium-high heat, sauté onions in butter for 3-5 minutes, or until translucient. Set aside.

3.) In a large bowl, mix together eggs and half and half. Add ham, cheese, and onions. Stir until blended well. Pour combined mixture into pie crust that has been placed onto an aluminum foil lined baking sheet (for easy spill clean-up).

4.) Cook at 375 for 40-45 minutes, or until pie is set (doesn’t giggle) and the edges are golden brown.
