Veggie nori rolls

It’s a full-on summer in New York with the usual humidity and high temps. I’ve been mostly living on poke bowls and salads lately, but this week, craving some change, I used all the same ingredients I already had in the fridge, but instead of arranging them nicely in a deep plate, I rolled them into Nori sheets.

I like the idea behind the Nori Rolls because of the freedom they provide. You can get really creative with the fillings; basically anything goes. Pick your favorite veggies, greens, sprouts, even fruit, add a creamy spread like hummus or soft cheese, sprinkle with sesame seeds or rice seasoning blend for a bit of crunch and it’s a perfect meal for the “fridge clean out” days. I’ve been really into cleaning and organizing my fridge weekly, as you probably witnessed on Instagram. It helps me better manage the produce I have to make sure I use it all in time. And now whenever I have “a bit of everything” left over in my veggie drawers, I can rely on this recipe to use it all up.

What do you like in your nori rolls?


Veggie Nori Rolls

  • 3 sheets nori
  • 1 1/2 cup cooked short-grain white rice
  • 1/2 cup purple cabbage, thinly sliced
  • 1 medium carrot, cut into matchsticks
  • 1 Persian cucumber, cut into matchsticks
  • 1 medium mango, thinly sliced
  • 1 avocado, thinly sliced
  • 4 oz cream cheese or firm tofu, sliced into strips
  • A bowl of water

Arrange the nori sheet on a work surface with the long edge close to you. Spread the rice in a thin layer over the nori sheet leaving about 1/3 of the end nori away from you clean. Layer the veggies and the cheese (if using) in any combination or proportions you like, on top of the bottom one-third of the nori sheet. Sprinkle with salt or sushi seasoning to your taste.

Dip your fingers on one of the hands in water and wet the far end of the nori sheet. Gently, pick up the edge closest to you and firmly roll it toward the center of the nori wrap. Transfer the whole roll to a plate or another surface, and let it sit for 5-10 mins, seam down.

With a sharp knife, carefully slice your roll and serve.
