I found a recipe for Greek Turkey tacos on Pinterest and really wanted to make them. But me and tortillas? Kind of a dangerous combination.
But…I knew I could easily convert the recipe into Lettuce Wraps, cutting out the calories and making it a super easy dinner! Yummy!
I still got all the Greek deliciousness from the recipe, without the tortilla temptation. The tzatziki was incredibly easy to make, the cucumber tomato salsa was addictive, and the turkey gave me the filling protein I needed! Loved this dish…
Over the course of the week, I even converted the dish into a Greek Turkey Taco Salad, with all the fixings…but on a bed of butter lettuce. So delicious!
Greek Turkey Lettuce Wraps | No, thanks to Cake
Ingredients
For the cucumber and tomato salsa:
- 3 Roma tomatoes, seeded and diced
- 1 English cucumber, diced
- ½ small red onion, diced
- 1 Tablespoon. lemon juice
- 1 Tablespoon. Red wine vinegar
- salt and pepper
For the tzatziki sauce:
- 1 Cup plain Greek yogurt
- 1 clove Garlic, finely chopped
- 1 TL. dried dill
- ¼ TL. Garlic powder
- ½ Cup finely diced cucumber
- salt and pepper
For the turkey wraps:
- 1 small red onion, diced
- 1 Lb. extra lean turkey breast fillet
- 1 clove Garlic, chopped
- ½ TL. ground oregano
- ½ TL. Greek spice
- ⅛ Cup dry white wine
- 3 Tablespoon. Tomato paste
- ¼ Cup chicken soup
- salt and pepper
- 1 Head Bibb lettuce, in leaves
instructions
- Make the cucumber and tomato salsa by tossing tomatoes, cucumbers, and onions in a bowl with olive oil, lemon juice, and vinegar. Season with salt; Set aside while you prepare the tzatziki and turkey.
- For the tzatziki, dice the cucumber quite small. In a medium bowl, stir together the cucumber, add it to the yogurt, and add the feta cheese, garlic powder, and dried dill. With salt; Set aside while you prepare the turkey.
- In a large skillet prepared with cooking spray over medium-high heat, brown the ground turkey and cook for 5 minutes, breaking up any large pieces. Once cooked through, transfer to a food processor to finely grind the meat.
- Meanwhile, add chopped onions and sauté for 1-2 minutes. Add your turkey again.
- Add garlic and oregano and cook for 1 minute more. Increase heat to medium-high and add white wine. Cook, stirring, until most of the wine has evaporated.
- Stir in tomato paste and chicken broth. Reduce the heat back to medium and cook for another 3-4 minutes. Season with salt and pepper.
- Optional: Add a pinch of Greek seasoning to your meat mixture. Note: I felt like the meat was a little bland, so I jazzed it up with a few shakes of Penzey Greek seasoning.
- To assemble the lettuce wraps, place two Bibb lettuce cups on a plate. Fill each cup with about 2 1/2 Tbsp. meat mixture, 1 1/2 tbsp. salsa and 1 tbsp. Tzatziki sauce
