Wholesome banana oatmeal cookies

I wasn’t planning on posting a recipe today, but I wasn’t planning on baking cookies last night either!

After such a GREAT week of eating (it was AWESOME!), it’s not that I was craving something sweet, I was just VERY CURIOUS GinaThe latest healthy cookie recipe.

Today I was sitting with a colleague and had the new cookie recipe Thin taste it flashed through my head. Third time this week… It’s such an easy recipe. Only THREE ingredients. And considering what those ingredients were, I knew she wasn’t kidding when she said healthy.

I prefer greener bananas to yellow-brown speckled ones. I usually freeze these brown guys for later use. And I knew I had to have some bananas in the freezer so they could be turned into delicious baked goods.

I already knew last night that I would bake… The result: a healthy cookie without a guilty conscience. Don’t expect them to taste like banana bread because, after all, they are flourless. However, expect to enjoy a fruity cookie without having to run to the gym (unless you want to, of course!) Yummy!

Ingredients

  • 1 Banana, ripened and pureed
  • ½ Cup oatmeal
  • 2 Tablespoon. chopped pecans or walnuts

instructions

  • Combine banana and oats in a small bowl. Note: Quick oatmeal is definitely recommended over regular oatmeal.
  • Add nuts and mix. Note: Gina recommended walnuts in the original recipe, but I only used pecans because that’s what I had on hand.
  • Scoop out the dough with a tablespoon and place it on the baking sheet to make 8 cookies.
  • Bake at 350 degrees for 15 minutes. Note: Cookies will be a little browner than expected, but they are PERFECT this way!

Perfect with a small glass of skim milk…and look at how chewy and bananay they are??
