This scrambled egg dish is a particular favourite among all egg lovers since it is simple and quick to prepare. Mumbai Style Egg Bhurji Ingredients | Egg Bhurji – Mumbai Style: This अंडा भुर्जी is fried and tossed with a variety of spices, with onion, tomatoes, capsicum, and chillies sautéed with spices. Ingredients
- 2-3 tablespoons butter
- tablespoon oil
- Preparation of Ginger Garlic Paste,
- 3 big onions, finely chopped, 3 medium size tomatoes, finely chopped, 1 medium size capsicum, finely chopped,
- 3 green peppers (finely chopped, less spicy) 1 tablespoon tender coriander stem, coarsely chopped
- 1 tablespoon Degi red chilli powder,
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder (optional) धनिया पाउडर
- a little water,
- 8 number of eggs,
- 2 tablespoons cubed butter
- Season with salt to taste.
- 1 tablespoon chopped coriander leaves
For Garlic Paste
- 7-8 garlic cloves, 1-inch ginger, peeled and coarsely sliced,
- for Ginger Garlic Paste Season with salt to taste.
For Toasting
- 1 tbsp Butter, मक्खन
- 2 Ladi pav, लादी पाव
For Garnish
- Onion, chopped; tomato, chopped; coriander sprig; green chilli, chopped
- a slice of lemon,
Process
Making Ginger Garlic Paste
Make a coarse paste with garlic, ginger, and salt to taste in a mortar and pestle.
Save it away for later use.
For Egg Bhurji | अंडा भुर्जी
- Make a tawa or shallow pan over medium heat, add butter and oil, and once heated, add prepared ginger garlic paste and sauté for 10-12 seconds.
- Sauté the onions for 30 seconds, then add the tomato, capsicum, green chile, and delicate coriander stalks for a minute.
- Now, add the degi red chilli powder, turmeric powder, coriander powder and sauté for a few minutes.
- Once the masala is sufficiently cooked, add a little water and blend it well.
- Now, add the eggs and well mix them in. Cook for 2-3 minutes on high heat.
- Once the eggs are well cooked, add the remaining butter and thoroughly mix everything together.
- Sauté for 10-12 seconds, adding salt to taste and coriander leaves.
- Turn off the heat and serve with ladi pav.
- Garnish with onion, tomato, a sprig of coriander, a green chile, and a slice of lemon.
Serve immediately.
For Toasting
- In a pan, add butter once it melts properly then place pav and toast on both sides. Keep it aside for further use.
