Barbara's Guacamole


There are many different versions of guacamole, a classic among classics.  After trying many ingredients and spices combinations, I finally found one that my man and I truly enjoy and now I'm sharing it with you.


- 2 ripe avocados
- One lime
- 1 garlic clove, crushed
- ½ tsp ground cumin
- 1 fresh jalapeno, seeds removed and finely chopped OR chili or cayenne powder, to taste.
- Sea salt
- 1 small green onion, finely chopped
- 1/3 of a red belly pepper, diced
- 2-3 tbsp frech coriander, finely chopped


Remove skin and pits from avocados and mash with a fork (do not use the mixer).

Add the Juice of half a Lime, the garlic, cumin, jalapeno (or Chili powder), salt and mix well.  Taste and rectify seasoning as needed by adding some more lime juice, chili or salt.

Mix in the Green onion.

Transfer to a serving dish and garnish with the Diced pepper and fresh coriander.
