RAGI SEMIYA/ FINGER MILLET VERMICELLI




Ragi or Finger Millet is a healthy cereal packed with calcium, proteins and other vital nutrients. It helps in weight loss, digestion, controlling diabetes and reducing the cholesterol levels in the body. Hence most people are advised to include Ragi in their diet. I have already shared a healthy recipe of Ragi ki roti/ Finger millet flat bread and in this post I am sharing a healthy and delicious breakfast recipe of Ragi vermicelli.

Ingredients

1 packet ragi semiya/ vermicelli
3 tbsp oil
1 onion chopped
2 tsp ginger garlic paste
1 tsp red chilli powder
2 tomatoes deseeded and chopped
Salt to taste
1 tsp pav bhaji masala
2 eggs
Water for cooking the vermicelli

Method

  • Boil 6 to 7 cups of water in a large pan and add 1 tsp salt.
  • Add the ragi vermicelli to this and boil for 7 to 8 minutes till the vermicelli is cooked.
  • Take a strainer and drain away the excess water from the ragi vermicelli and keep ready.
  • Crack open the eggs in a bowl, add salt to taste and keep ready.
  • Heat a non stick pan and add 1 tbsp oil. Stir fry the eggs till cooked and transfer to a plate.
  • Now heat 2 tbsp oil in the same non stick pan, add onions and saute till the onions turn golden.
  • Then add ginger garlic paste and saute till the raw smell goes.
  • Add tomatoes and cook for a few minutes till the tomatoes turn soft.
  • Now add red chilli powder, salt, pav bhaji masala and mix well.
  • Next add the eggs and give a quick stir.
  • Finally add the vermicelli to this and mix well.
  • Switch off the gas and serve hot.
