Turkey Bone Soup

"Tis the Season for recipes that use Turkey leftovers from the Thanksgiving and Christmas dinners. One of my favorites is a recipe given to me by student and friend Cynthia Young. She is an amazing cook!

After you have carved all the meat off the holiday turkey, don't throw away the carcass. Turn it into Turkey Bone Soup. 

 

Turkey Bone Soup

Turkey Carcass or a few pieces of turkey on the bone purchased from your butcher

Water to cover carcass, about 64 oz

Onions, Carrots, Celery, all diced

Pickling Spices, plus extra cinnamon

Rice

Over medium heat, bring Turkey Bones and water to a boil to make your turkey bone broth. (Keep in mind, this stuff is magical if you or someone you know is suffering from a cold.)

While boiling the turkey bones, add pickling spices. 

I use enough to fill a large tea infuser.

Using the tea infuser allows me to pull out the bits of cloves and other spices I don't want left in the soup. You can also use cheesecloth to make a bouquet garni or simply strain your broth after removing the turkey bones. (You may have noticed I was late adding the pickling spices so my soup didn't have the strong pickling flavor I love in this recipe, but the soup was still delicious!!)

Remove the turkey bones and allow them to cool.  Strain broth and allow to cool so that you can skim off any fat that rises to the top. 



Add turkey stock back to the heat and add diced celery, onion, and carrots.

Pull off any additional meat from the bones and add to the simmering soup. Add rice and allow to simmer for an hour.


Serve hot. Enjoy!!
