Weekend recipe No:3 Sivakasi special Umbrella chicken

When relatives, friends or any other union happens one of the important things talked about is delicious food. One such occasion happened when my family and brother-in-law family met in Coimbatore in my father-in-laws house couple of weeks back ago.. It was decided that Sivakasi Umbrella chicken will be the side dish for Chicken Dum biryani for lunch that day.. This recipe was by Jeya Kiruba( wife of my BIL) and she hails from Sivakasi( a town in south Tamilnadu, India). This dish is commonly known as Sivakasi umbrella chicken.. becoz its invented in Sivakasi😜😜... I had this dish back in 2011 when I visited Sivakasi and this will be my second time to taste this dish, and this time its homemade.

The name itself increases the curiosity about the dish but it's a simple dish yet yummy .. We set out to buy the ingredients mainly to buy chicken legs( drumstick) from Thudiyalur market where one can find many butcheries selling mutton, chicken and fish. We selected from the live stock a chicken which is a bit taller than others and the butcher made a nice cut of the leg pieces. You can also buy the chicken drumstick from frozen food section where you will find a pack of 4 or 6 pcs in each pack.

Key ingredients:
1. Chicken drumstick - 4 Pcs or as many as required
2. Red chili powder - 1.5 tea spoon
3. Ginger garlic paste -  1 table spoon
4. Maida - 4 table spoon
5. Corn flour - 1 table spoon
6. Medium size egg - 1No
7. Food color - Red
8. Salt and pepper- as required

Preparing the chicken :
Hold the chicken legs/drumstick upside down and split the flesh and spread it. It will form an shape of inverted umbrella. Do it patiently otherwise the flesh will detach from the bones.

Marinate the chicken: In a bowl add Maida, corn flour, egg and mix it.. Now add ginger garlic paste, red chili powder( adjust as per requirement), pinch of food color, salt and one or two teaspoon of water and mix it until it becomes a paste. Apply the paste on the chicken and leave marinate the chicken for at least one hour.

Deep frying: Once the chicken is marinated.. deep fry the chicken in medium for 4-5 min until the outer side of the chicken turns crispy and the inside is fully cooked. Now the chicken is ready to be served.

Sivakasi umbrella chicken makes nice combination for biryani, fried rice and Sambar Rice. Try this Crispy and delicious dish at home. Share the recipe with your friends and relatives and have great time.
