The Best Vegetables to Eat During Winter

If you live somewhere cold in the Winter months, it can be a challenge to get fresh veggies. If you want to eat healthy and with the seasons, here is a list to add to your next grocery list.

  1. Cabbage contains Vitamins C and K, folate, fiber, antioxidants and has been shown to reduce cholesterol and lower your risk of cancer and diabetes. Most varieties of cabbage love the cooler weather and peak during fall and winter. Cabbage is best eaten raw, so make a coleslaw or add some to your next salad or stir fry.
  2. Brussels Sprouts. Brussels sprouts are kind of like mini cabbages. They also contain cancer-fighting antioxidants and peak during fall and winter. Try roasting them with olive oil or topping them with brown butter.
  3. Winter squash. Try acorn, butternut, kabocha or delicate squash. They are all at their prime during winter months. They contain carotenoids, vitamin A and potassium. Squash is a great side dish for any meal.
  4. Potatoes can get a bad rap but they do contain potassium, magnesium, vitamin C, protein and folic acid. Sweet potatoes are a healthier choice and also contain vitamins A and C, fiber and beta-carotene. Try stuffing a baked potato with kale or broccoli for a healthier alternative.
  5. Onions are high in vitamin C and fiber and can help lower your cholesterol levels. Try sautéing onions and adding them to homemade pizza.
  6. Beets contain a lot of antioxidants and are rich in vitamins A, B and C, potassium and folate. Try adding some herbs to beets for a nice side dish.
  7. Carrots contain beta-carotene, which converts in the body to vitamin A. It also contains vitamin C and antioxidants. Try warming up carrots with butter and honey for a sweet but healthy side dish.
  8. Turnips contain vitamins C and K, potassium, fiber, calcium and folate. They are slightly sweet so they can be a nice addition to many dishes.
  9. They contain fiber, potassium, vitamin C and folate. They are similar to carrots and great in soups or stews.
  10. It has a lot of vitamin C, magnesium, vitamin K and potassium. It is great in a pasta dish.
