Potatoes are an incredible source of good food. In many homes it is taken as something "common", versus a more refined meal, but we must not neglect the use of potatoes in our diet.
As main component of the many nutrients potatoes have, there is starch and insolluble fibre. People tend to think that a diet rich in potatoes will soon put them on the overweight side. However, we must remember though, that starch is needed as a form of easy-to-get energy.

When we perform some kind of physical activity and even intense mental activity (yes, I said mental activity), like sitting for a difficult exam, we first consume the sugar that is present in outr blood and next come the glycogen reserves from the liver. Glycogen is stored from the excess of nutrients, mainly sugar, starch and fat, for further use. So, if we neglect carbohydrates, we will eventually feel a lack of energy.

At this point, I must stress the fact that the overall wight control comes from a balance between what we ingest and the energy we consume. That is all there is to it. So all we need is not to eat too much of some things and balance them with others. Not too much potato, but keep it steady, and balanced with fresh vegetables. Recent studies by UCLA and others, have proved that a person can consume potatoes and still lose weight.

What Potatoes Contain
Starch, solluble fibre, vitamins of the B complex and trace elements like phosphorus, zinc, iron and magnesium, are the principal nutritional contents of this valuable food, which the Conquerers of the New World shipped back to Europe.
In 1845, Ireland was so dependant on the potato crops, that when these failed due to a fungus that rotted the plants' roots, many Irish starved to death, during what was called the Great Famine.
Consumed with the skin, we can also obtain Vitamin C from it, totalling a very healthy food.

How to cook them
The best way to maintain the greatest amount of nutrients within the potato is to steam them, not boil them in water, and keeping the skin on. If you don't like the skin, you can take it off after cooking, but it is a good, healthy component of this tuber. You can also cook them in special cookware made of surgical steel, that allows the food to cook at temperatures slightly below 100 C, avoiding the loss of nutrients and minerals that go with the boiling water when it is thrown away.

Always eat them freshly cooked and slightly cooled, so as to increase the amount of insoluble fibre, thus helping to cleanse the intestine mucose and giving more bulk to the faeces, aiding a regular evacuation.
French fries are nice once in a while, but we risk consuming overheated oil, which is not good.
Also, they can be done in a microwave oven, without losing or destroying nutrients, as long as they are done within a ventilated plastic wrap.
