Pancake Day is one of our favourite days and it's probably one of yours too if you're reading this! But you can make pancakes any day... If you're looking for a quick, easy and reliable pancake mixture then you're in the right place. Our pancake mix works wonders for flipping. It creates a fantastic crepe and it goes great with both savoury and sweet toppings. We've listed some topping ideas below in the notes. This recipe serves 2 (2 pancakes each). Ingredients
  1. 2 ounces plain flour
  2. 1 egg
  3. Milk
  4. 10g soya protein powder
  5. Unsalted butter
Instructions
  1. To make the batter, blend together the flour, egg, soya protein powder; gradually adding the milk until the batter reaches the 275ml line (1/2 pint). If you don't have a blender, you can whisk together the mix in a measuring jug.
  2. Melt a small knob of butter in a non-stick pan
  3. Use a ladle to serve a 1/4 of the mix into the hot butter. Turn the pan and/or use a spatula to spread the mix out into a circular shape as you do.
  4. Fry the pancake for 2 minutes until its base loosens from the pan and is golden.Then have some fun flipping it.
  5. Repeat steps 3 and 4 for each pancake, using a little bit of butter in between if necessary.
  6. Serve up with your favourite toppings and enjoy... delicious.
