Nadine’s famous Müesli-Bars

As promised to many people, the recipe for our very special, extremely tasty, deliciously chewy and unbelievably high-energy muesli-bar finally made its way onto our blog.

Nadine’s Müesli-Nut-Fruit-Bars

Ingredients
(for 10 bars of 84g)

150g         Rolled Oats
80g           Dried Sultanas
60g           Dried Pitted Dates
80g           Cashews
20g           Hazelnuts
80g           Almonds
50g           Desiccated Coconut
50g           Sunflower Kernels
110g         Peanut Butter
130g         Golden Syrup
30g           Raw Sugar
1 Tsp        Ground Cinnamon
2 Tsp        Vanilla Essence

(of course, you may change the different kinds and weight of the nuts and dried fruits as you like…)

Instructions

  1. Process dates in a food processor until small bits remain. They should form a dough-like consistency and roll into a ball.
  2. Process nuts and kernels in a food processor until small bits remain, but be careful not to grind them too long or you’ll get meal or even butter.
  3. Warm the peanut butter, golden syrup, sugar, cinnamon and vanilla essence in a small sauce pan over low heat. Stir continuously until the mixture is smooth.
  4. Mix the warm mixture with rolled oats and add all the other ingredients. Mix until you have an even mass.
  5. Line a square tray/dish with baking paper. The size depends on your preferred thickness.
  6. Put the mixture into the tray and press it down until uniformly flattened. A rolling pin comes in handy.
  7. Place the tray in the fridge for about an hour.
  8. Cut into 10 even bars. Put them into an airtight container and store in the fridge. If you don’t store them in the fridge, line each bar in cling wrap or parchment paper.

We tried these bars first while hiking on the Overland Track in Tasmania and made them again for the Te Araroa Trail. You may have them as a high-energy snack or even as a whole meal.
