Keto Eggplant Lasagne

Now that I am successfully on my journey with Keto nothing will ever stop me from reaching the end goals – even if we all have had head colds/sore throats/coughs/sinus infections – we are now on the mind {Thank you so much Kim for sharing the Jewish Chicken Soup recipe on Facebook}

We all love Lasagne in our family – if we have a huge celebration all of our boys ask for that to be made {Birthday times/special occasions}.

Keto Eggplant Lasagne

YUMMY DINNER MADE WITH LOTS OF VEGGIES

Recipe :

  1. Mince Meat – 500grams
  2. 1 onion
  3. 1 carrot
  4. 1 zucchini
  5. mushrooms
  6. broccoli
  7. 1 capsicum
  8. 1 Jar of Aldi Passata Sauce
  9. 1 Big Eggplant
  10. Salt/Pepper/Garlic and Italian Herbs {to taste}
  11. 1 large container of Sour Cream
  12. Block of Cheese – we grate our own cheese never ever buy pre-grated cheese.

Method {in the slow cooker}

  1. Cut up the onion into slices, brown them in a big fry pan with Lard
  2. Slice the Eggplant, and add lots of Pink Rock Salt to each slice {I layer them on a plate with paper towel on the plate – and salt each layer} Set aside.
  3. Add diced Mushrooms to the brown onion, cook them to lightly brown
  4. Add the mince meat and cook until its all broken into small pieces and is brown
  5. Add Grated Carrot, Zucchini and sliced Broccoli/Capsicum
  6. Stir in the Aldi Passata Sauce
  7. Add lots of Pink Rock salt, pepper and Italian Herbs {I add heaps of herbs because we love our herbs}
  8. When its bubbling away I turn on the slow cooker – I usually try to make this before 11.00am so its ready for dinner. I turn the slow cooker onto high for about an hour and then turn it to low.
  9. Layer the Meat with the Eggplant slices – and add Sour Cream onto each layer of the Eggplant. Keep on adding the mince/veggies and then the Eggplant layers and then the sour cream.
  10. When its bubbling away {after an hour} turn down to low
  11. About an hour before serving it up I add lots of grated cheese – the more the better it taste
  12. Enjoy with your favorite Glass of Wine or Beer!

BEFORE ADDING THE CHHESE – OPS SORRY I FORGOT TO GET THE END RESULTS – LETS JUST SAY IT WAS DELICIOUS

It is possible to keep the yummy meals that you normally make, but change it up so that pasta and heavy carbs are taken away for vegetables! Another one of our favorite meals are Cauliflower Pizza with bacon and eggs – its so good they all want more than 3 slices.
