BBQ Pulled Pork Martini

This week we have a fantastic recipe from our Executive Chef from Michael Dannecker of the Hilton Rose Hall Resort & Spa in Jamaica.

BBQ Pulled Pork Martini

Ingredientes:

Cooked jerk pork                                     1/2 lb
Butter                                                         2 tsp  
Green bell peppers, diced                        ¼ lb
Onions, diced                                           ¼ lb
Garlic, chopped                                        1 oz
BBQ  sauce                                              1 cup
Jerk sauce                                                 ½ cup

Coconut milk                                            1 tin
Salt & pepper                                            to taste
Nutmeg

Plantain Chips                                           6pc
Fried Callaloo or basil leafs                      6pc 

Preparation:

1. Shred the meat
2. Sautee vegetables in butter for 5 min
3. Mix the meat, vegetables and the sauces keep warm
4. Add the coconut milk and seasoning to the mashed plantain
5. Place a scoop of plantain mash in the martini glass
6. Top with the pull pork and garnish with the plantain chips and the fried leaf
