Mediterranean Seafood Zarzuela (Spanish stew)
INGREDIENTS
w Grouper fillet 1.5 Oz.
w Green mussels 3 Oz.
w Clams shells 3 Oz.
w Black Tiger Shrimp 16/20 4 Oz
w Azafran 0.1 Oz.
w Fresh garlic 1.5 Oz.
w Fresh onion 2 Oz.
w Fresh dill 0.1 Oz.
w Coriander 0.1 Oz.
w Lemon grass 0.1 Oz.
w Pernod 0.3 Oz.
w White wine 2 Oz.
w Fish broth 4 Oz.
w Crushed red pepper 0.1 Oz.
w Olive oil 0.5 Oz
DIRECTIONS
In a heating pan put the olive oil, onion and garlic,. When they are brown, add all the sea food (fish, mussels, clams and shrimp). Sautée for a few minutes and add the white wine and the spices. Salt and pepper to taste, 2 minutes before serving add the pernod, these will give the plate aroma and liquorish flavor.
