MAHURA

It's a prasad of Lord Jgannatha,Puri..made with lots of vegetables...


Ingredients to make Mahura

  • Pumpkin - 1.5 cups
  • Yam or suran - 1 cup
  • Potol or pointed gourd - 1/2 cup
  • Raw banana - 1 cup
  • Brinjal - 1/2 cup
  • Red leafy or koshala saga -1 cup
  • Ginger 1/2 inch properly mashed
  • Haldi 1/2 tspn
  • salt as per taste
  • For paste :
  • Mustard Seeds -1 tspn
  • fennel seed -1 tspn
  • Cumin seeds -1 tspn
  • Grated coconut- 1 tbspn
  • For Tadka or temering
  • Mustard-1/2 tspn
  • Dry Red chillie -1
  • Ghee - 1/2 tspn
  • PREPARATION
First cut all the veggies into small cubes.

Then in a pan put these veggies along with water, turmeric and salt.

Let it cook until veggies are half done. (half cooked)

Make a Paste of mustard, fennel, and cumin seeds with coconut and water.

Then add the paste along with leafy vegetable or koshala saga.

Simmer and let it cook for 10 mins.

When its done now prepare for tadka. Heat a pan add ghee in it add mustard then chillie. When it splutter pour over that prepared vegetable.Let it cook for a minute.

 Now mahura is ready. It is best served with rice or khichdi..
