A midweek meal in a hurry with Britmums & Dolmio’s #ThankGoodness Challenge

There’s nothing like knowing you’ve got to have dinner on the table within an hour to leave you sweating bullets after a crazy day of working, mumming and god knows what else-ing! Especially when it’s a Wednesday – known as happy hump day but usually in this house means I HAVE THE HUMP day.

So what oh what can we do to make things less hump-ish mid week?

I teamed up with Britmums and Dolmio in the #ThankGoodness Challenge to see how mince, veggies a jar of scrumptious Dolmio Bolognaise Sauce and a whole load of everyone being busy and hungry can be turned into a balanced mid-week family meal that results in clean plates.

One of my favourite tricks mid-week is to turn yesterday’s leftovers into a mega meal, and huzzah! because we happened to have some left over mash, and you know what left over mash means…..scrummy cottage pie! that’s what.

So let’s get down to business. First and most important, all you will need is:

Ingredients

  • 500 grams minced beef
  • 1 onion, finely chopped
  • 2 cloves of garlic
  • 1 aubergine (grated)
  • 1 carrot (grated)
  • 1 courgette grated
  • 1 jar of Dolmio Bolognese sauce (which contains no artificial colours, flavours, preservatives or sweeteners yay!)
  • Some cheese (grated)
  • Olive oil
  • Yesterday’s left over mash

And now for the magic….

Method

Brown the minced beef in one tablespoon of olive oil for around four minutes then set aside. Next sautee the onions and garlic in another tablespoon of olive oil and once softened add all the grated veg and fry for another couple of minutes.Add the mince back into the pan, and empty the contents of the Dolmio Bolognaise sauce into the pan too….

Let it simmer for around 30 minutes (or basically, as long as you have got!!!).

Meanwhile, stick the grill on, and once the mince is ready, pop all the mince into an oven proof dish, spread the leftover mash on top, sprinkle with a generous amount of cheese and grill until for 5 or 6 minutes or until the top is browned. Serve to lots of happy smiley faces (note – humps have well and truly disappeared!)

Phew – thank goodness for Dolmio eh?
