How To Prepare Plantain Pancakes

Hey guys, feel like ages! have been away for a while and have really missed y'all. Thanks to those that called/texted; I appreciate the care.

So today, I want to extend the appreciation and show you how you can make Plantain pancakes for yourself! You just can't imagine how yummy these pancakes really are until you try them. It's that dish you shouldn't miss.


Plantains are a starchy variety of bananas, but unlike the banana fruit, plantain has to be cooked before it can be consumed and there are countless recipes to prepare using plantains. This is one of them. This recipe is very easy and doesn't require much time and ingredients. The recipe also works fine with bananas; you'll just have to replace the plantain with bananas.

Here are all the ingredients you'll need:
2 ripe/overripe plantain
2 large eggs
2 tablespoonful all purpose flour
1 level teaspoon baking powder
100ml water
A pinch of salt
Pepper (It's optional and it could be either ground, dry cayenne pepper or grated red bonnet pepper to taste).
Vegetable oil for frying

Method of preparation:
- Remove the peels of the plantain, chop and blend to puree in a blender. You can as well mash using a spatula until smooth and thick.

- Break the eggs one at a time and whisk. Add the egg to the mashed/pureed plantain and stir using a spatula, whisk or fork then set aside.

- Mix the flour, salt and baking powder in a mixing bowl and add to the batter then stir.

- Add water to the batter little at a time and mix until smooth to form a light paste.

- Set aside to rest while you prepare to fry. (Note that pancakes should not be deep fried. It should be done the way you fry eggs but with more oil. Do not use thin pans else your pancake will get burnt. Use non-sticky pan or heavy -bottomed thick pans).

- Place a greased pan on a moderately low heat. Using a deep spoon, scoop some batter onto the hot greased pan and leave to cook.

- Flip to fry the other side once the edges of the pancake starts to cake and bubbles which pops and leaves hole on the surface of the pancake appears.

- Fry both sides until golden brown. Do not overcook and get the pancakes burnt. Repeat the frying procedure for the rest of the batter.

- After frying all, serve as desired. Plantain Pancakes serve well alone and also with any chilled drink like chapman, juice, drinks, local drinks etc.
You can also garnish with anything if you choice like small fruits or fillings.
