Cheesy Chicken Taco Bake Low Carb Recipe

If you didn’t know already, Phillip and I are on a Low Carb diet called Keto. We’ve been on the diet for a little over 2 years now and have lost over 100 pounds combined. In the past few months, we’ve hit a rough patch and stagnated on our weight loss. It isn’t really a plateau, it’s more just laziness combined with boredom. For the first year that we were on our diet, we literally made the same low carb meal at least 6-8 times a week (dinner and leftovers for lunch the next day at least 3 days a week). It’s a great meal, we just eventually got bored and started straying and then ultimately cheating on our diet.

So we went on the hunt for new low carb recipes and came across one for a low carb Taco Bake. We made it once and immediately fell in love. It combines cheese (my favorite food EVER) with beef (Phillip’s favorite) as well as a few other cheap ingredients like tomato sauce, green chilies, and taco seasoning. It’s a great recipe and we make it about once a week now. If you want to pin that recipe for later (I highly recommend it), the Pin is below.


Last week we were going to make the taco bake for Phillip’s brother Ajax and his wife Amy but then we remembered that Amy recently had her gallbladder taken out and can’t eat red meat very easily. So we decided to adapt the recipe into something a little different. We made a Chicken version and let me tell you, it was AMAZING! We made a full size batch (8 servings) and after the meal, there was only 1 serving left!

So without further ado, here’s the recipe! Please note that I am not a food photographer and we halved the recipe when we made it this time so all pictures are taken in an 8×8 baking dish instead of the 9×13 pan recommended by the recipe.


Low Carb Cheesy Chicken Taco Bake
Deliciously cheesy low carb Chicken Taco bake. Under 300 calories per serving and includes built in leftovers! Can easily halve the recipe for smaller groups as well.

    Ingredients
    Crust
    • 4ounces cream cheese(softened)
    • 3large eggs
    • 1/3cup heavy cream
    • 1/2teaspoon taco seasoning
    • 8ounces cheddar cheese(shredded)
    Salsa Chicken "Filling" (prepare in advance)
    • 1pound chicken breast(boneless, skinless)
    • 1jar salsa
    • 2tsp taco seasoning
    Topping
    • 8ounces cheddar cheese(shredded)
    Instructions
    Crust
    1. Preheat oven to 375 degrees
    2. Grease a 9x13" glass baking dish and then spread shredded cheddar over bottom of pan
    3. Beat eggs and all other crust ingredients in a bowl until smooth (a few lumps are OK)
    4. Pour egg mixture over cheddar as evenly as possible (you can jiggle the pan a bit to spread it more evenly)
    5. Bake at 375 degrees for 20-25 minutes and let stand for 5 minutes before adding the topping
    Salsa Chicken (prepare in advance)
    1. Place chicken in crockpot
    2. Sprinkle taco seasoning over chicken and pour entire jar of salsa on top
    3. Cook on low for 4-6 hours
    4. Shred chicken with forks, stir mixture thoroughly and cook for another 30-60 minutes on low
    Topping
    1. Reduce oven to 350 degrees
    2. Spread prepared salsa chicken over the crust
    3. Top with cheddar and optionally sprinkle paprika on top
    4. Bake at 350 degrees for 20 minutes or until cheese is melted
    5. Serve with additional toppings such as shredded lettuce, sour cream, and green onions (will add carbs and calories)
    Recipe Notes

    You only need ONE pound of chicken for the taco bake but I recommend making a larger batch of Salsa Chicken (use 2-3 pounds of chicken, add 1 additional jar of salsa, and add seasoning as needed). The chicken is great on its own with a veggie side dish, on top of salads, or add a dollop of sour cream and some shredded cheddar for a quick meal so you'll want more, trust me!
