Spicy Instant Pot Bean Soup in One Hour

Influenza B struck our house on Christmas Eve. Zoë was the first to come down with it thanks to her entire snowboarding team getting sick. I got it a few days later and the next day both Brian and Kaylee came down with it too.

I've had the flu my fair share of times, but this one in particular was the worst. I'm still not feeling myself 2 weeks later! I'm grateful that I work from home and can decide to take days off whenever I need to.

With all of us being so sick, I've found it extremely hard to keep a healthy meal on the table for my family. I really don't know what I'd do without my Instant Pot in times like this!

It's so easy to make soup in the Instant Pot. I often just toss whatever veggies and meat I have in there with some homemade chicken stock and spices – and that's the soup we eat.

However, I do like to mix it up. My Pressure Cooker Cauliflower Soup is a huge favorite (as is my Instant Pot Cheesy Broccoli Soup), but it's not so great when you're sick. We had a bunch of dried beans, so I decided to make a bean soup recipe. I made it spicy to help clear out our sinuses, but you can cut back on the spice level if you prefer.

I have had a lot of people ask if you really need to cook the beans for the full hour. We have cooked this recipe many times and feel it turns out best when you cook the beans for a full hour without soaking them first.

Spicy Instant Pot Bean Soup

Ingredients

  • 1/2 small bag of red beans
  • 1/2 small bag of pinto beans
  • 1 quart chicken broth or vegetable broth
  • 1 jalapeno, de-seeded and minced
  • 1 serrano pepper, de-seeded and minced
  • 1 white onion, diced
  • 4 strips of bacon, diced
  • 1/2 bundle of fresh cilantro, thick stems removed and leaves chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon cumin
  • 1 teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 tablespoon Real salt
  • 2 teaspoons fresh ground pepper
  • Filtered water

Directions

  1. Chop all of your ingredients.
  2. Wash the beans in a strainer until the water runs clear. Remove any pebbles.
  3. Place beans, onion, cilantro, peppers, and broth in your Instant Pot (or other pressure cooker), then stir until well combined.
  4. Add the bacon and garlic to the Instant Pot, then stir.
  5. Add all of the spices next, then stir well.
  6. Add the filtered water until it reaches the max level (marked on the Instant Pot inner pot).
  7. Set the Instant Pot (or other pressure cooker) on high pressure mode for 1 hour. Use natural pressure release (allow the pressure to on its own).
