Vegan Nacho Cheese, or as Eric Likes to Call it: Dorito Dip

What do you call a nosy pepper? Jalapeno business! That joke literally makes me laugh every time. Anyhoo, I’ve recently dipped back into veganism, after getting some serious vegan eats in Texas two weeks ago, and one of the hardest things about veganism is the lack of Cheese. Or at least it used to be!

I became vegetarian 24 years ago, and back then the only vegan cheese available, was awful. Cardboard awful. Cardboard mixed with paste awful. Things have definitely changed though, I was floored when I tried Chao Creamy Original last week, it legit tasted like sliced mozzarella.

I’ll admit, my favorite Nacho Cheese, is Tostito’s Salsa Con Queso, but have you seen the ingredients in that stuff? It’s MSG city! This nacho cheese is not quite like that salsa con queso, but it is a tasty alternative.

I first made this Vegan Nacho Cheese to eat with chips, and yes I ate all the chips that you see in that picture up there. Aside from the ones my children stole from my plate. And I was lucky enough to have leftovers in my fridge on Taco Tuesday. We have had Taco Tuesday for over a month, and I didn’t even consider what I would use as an alternative, now that I’ve gone vegan. It was fantastic, I just zapped it in the microwave for a minute and then poured it over my chili, refried beans, corn, and brown rice. Yeah, we know how to party on Taco Tuesday.

Eric, who is not a fan of vegan cheese and is a huge fan of dairy cheese, tried this and said two things about it:

  1. It tastes like Doritos in dip form
  2. It tastes like guacamole that tastes like nacho cheese

Let’s be honest, you owe it to yourself to try this cheese after those rave reviews.

Vegan Nacho Cheese

1 tbsp butter
1 tbsp flour
1 cup milk
3 tbsp nutritional yeast
1 tsp cumin
1/2 tsp paprika
1/4 tsp turmeric
1/2 tsp garlic
½ tsp onion
1/2 tsp salt
1/4 tsp chili powder
1 tbsp vegan mayo
Dash cayenne pepper
1/4 tsp pepper

Directions:

  1. Melt butter in a medium saucepan
  2. Add flour and stir, cook until it is well mixed and darkening slightly
  3. Slowly whisk in milk and cook until it begins to thicken, to the consistency of watery gravy
  4. Add the remaining ingredients and cook until desired thickness
  5. Devour with chip, tacos, or anything else you want to taste delicious!
