Christmas Chocolate Fudge Cake||Day 8...


I love to make a chocolaty deluxe fudge cake for Christmas. It is one of the many bakes I enjoy making each year. So I have decided to share this recipe with you so that this Christmas you too can enjoy this cake.

Ingredients:
For the Cake
225g dark chocolate
50g cocoa powder
180g self raising flour
1/2 teaspoon of baking powder
4 eggs
335g caster sugar
200g butter
1 teaspoon of vanilla extract

For the Vanilla Frosting
4 splashes of milk
2 caps of vanilla extract
500g icing sugar
2 capfuls of vanilla extract

For the chocolate fudge icing
125g icing sugar
40g cocoa powder
20g butter
25g chocolate chips

  1. First pre heat the oven 180℃ and melt the chocolate in the microwave with the butter. Make sure every 20 seconds you stir the mixture so ensure there are no lumps. When all of the lumps are gone leave to cool.
  2. At the same time you are doing that add the eggs and vanilla into a bowl and on a high speed until the mixture doubles in size and creates a ribbon effect. 
  3. Now add the sugar, baking powder and flour- make sure to fold in these ingredients and add a little at a time.
  4. Once folded in now add the cooled chocolate and butter at the same time as the cocoa powder and again fold in.
  5. Place in 2 sandwich tins and bake for 32 minutes. When baked start to make  the vanilla frosting and chocolate fudge icing.
  6. So for the vanilla frosting add all the ingredients into a bowl and mix until there is no icing streaks and the mixture is soft and creamy like.
  7. When the cake is fully cooled place the vanilla frosting between the 2 cakes so sandwiching them together. 
  8. Now its time to make the fudge icing. Add half of the butter and cocoa powder into a bowl and melt in the microwave.
  9. After about 30 seconds put around a quarter of your icing sugar and chocolate chips into the bowl and place back in the microwave.
  10. As soon as they create tiny balls take out of the microwave and straight away on high speed place into a mixer and add the remaining icing sugar and butter.
  11. When the mixture comes together into a slightly runny mixture plaster all over the cake. To finish you can add some gold sprinkles or whatever you want.
