Dragon Fruit Salsa

Dragon Fruit is a gorgeous exotic fruit native to places like Vietnam and Thailand. It’s also known as pitaya. The nice thing about this fruit, besides its visually stunning exterior, is its mild sweetness. It has a slightly sour taste and is not excessively sweet, which means works well with herbs and other typical salad ingredients. Here we’re making a simple salsa with cilantro, jalapeno, lime, olive oil, and the lovely Dragon Fruit. Serve this alongside some roasted chicken for a great summer meal.

Dragon Fruit Salsa

  • 2 dragon fruit
  • 1 bundle cilantro, leaves finely chopped
  • 1 jalapeno pepper, finely chopped
  • 3 tablespoons lime juice
  • 5 tablespoons olive oil

The process…

This is the dragon.

Remove the pink skin and slice the white flesh into small cubes. Wash and spin dry the cilantro leaves. Chop the leaves finely and chop the jalapeno finely. Mix the lime juice and olive oil, preferably with a small blender but by hand is also okay. Toss the dressing with the other ingredients. Serve immediately.
