Roasted beets are amazing. Add orange and thyme and you’ve got a really special flavor combination, one sure to please your guests.
Orange Thyme Roasted Beets
- 1 pound beets (small beets if possible)
- 1 tablespoon finely chopped fresh thyme
- Zest of one orange
- 2 tablespoons orange juice
- ½ tablespoon lemon juice
- 3 tablespoons olive oil
- Salt and pepper
The process…
Put the whole beets on a baking sheet and bake at 375°F for about 40 minutes or until the beets are soft and thoroughly cooked. You can test them with a fork, which should easily pierce them.
Using a small pairing knife, peel/cut away all the skins of the beets. The beets should look like this after peeling. You can cut them into bite-size pieces.
Remove the zest from the orange and chop the thyme finely.
To make the dressing, whisk together the orange juice, lemon, and olive oil, along with a pinch of salt and some freshly milled pepper. Toss the dressing with the beets, zest, and thyme.
SERVES 3-4
