Middle Eastern beef and hummus wraps recipe

For a quick and easy weeknight meal try these Middle Eastern inspired beef and hummus wraps.

INGREDIENTS

2 teaspoons ground cumin
1 teaspoon grated lemon rind
1 tablespoon olive oil
1/2 teaspoon cracked black pepper
500g Coles Australian beef BBQ round steak
200g pumpkin and harissa hummus
4 large pita bread
60g baby rocket leaves
200g punnet Perino tomatoes, sliced
1 Lebanese cucumber, seeded, sliced
1 red onion, thinly sliced
1/3 cup (95g) Greek yoghurt
1/4 cup fresh mint leaves
Grated lemon rind, extra, to serve
Oven-baked chips, to serve

METHOD

Step 1 Combine cumin, lemon rind, oil and pepper in a large bowl. Season with salt. Add beef and turn to coat.

Step 2 Heat a chargrill or frying pan over medium-high heat. Cook beef for 2 mins each side or until cooked to your liking. Transfer to a heatproof plate. Cover and set aside for 5 mins to rest. Thinly slice.

Step 3 Spread the hummus over pita bread. Top with rocket, tomato, cucumber, onion, beef, yoghurt, mint leaves and extra lemon rind. Serve with chips.
