How to make lemon bliss balls

Following on from my addiction to my chocolate Bliss Balls I’ve been making Lemon Bliss Balls as well.  These bliss balls taste like a lemon and coconut slice but they are guilt free snacking.  The ingredients are as simple as lemon, coconut, cashews and maple syrup.

Once again these are really easy to make. There’s no oven required which is good in the the current weather conditions.  Things are even easier if you do have a Thermomix or Cuisine Companion but a standard food processor or blender will also do the job here if you just try soaking the nuts in water beforehand to soften them up.

Ingredients
  1. 1 cup raw cashews
  2. 1 cup desiccated coconut
  3. zest of one large lemon
  4. juice of one lemon
  5. 1/2 tsp vanilla extract
  6. pinch of salt
  7. 1 tbsp maple syrup
  8. 1 tbsp coconut oil
  9. extra desiccated coconut for rolling in
Instructions
  1. 1. Process the cashews, coconut, lemon zest, lemon juice, vanilla, salt and maple syrup on a high speed until the mixture forms a smooth paste.
  2. 2. Spread the extra coconut on a clean surface and use your hands to roll the mixture into small balls and then roll in the coconut to coat.
  3. 3. Keep in the fridge. They keep for a week.
