Sardine Cakes

Healthy Sardine Cakes served with salad or sautéed spinach.
Ingredients:2 tins – Sardines in oil ½ cup red onion – finely chopped¼ tsp – turmeric powder ½ tsp – chili powder 1 medium potato – boiled and mashed Grated ginger - 1 tbsp Salt to taste Cilantro – ½ cup Oil for frying Semolina (Rawa/Sooji) for coating Method:
  • Discard bones and mash sardines using a fork. Add all the ingredients except Semolina and oil. Make 4 patties/cakes.
  • Heat pan and add a spoonful of oil. Lightly coat cakes with semolina. Fry fish cakes till brown on each side.
  • Serve hot with some sriracha sauce.
Sautéed Spinach: Wash and dry 4 cups of spinach. Heat 1 tbsp of oil in a pan and add 3 cloves of garlic (sliced). When the garlic starts to turn brown, add spinach in batches and cook for about 2 mins. Allow to cool before sprinkling salt and pepper.
