Louisiana Crawfish and jambalaya are two staples that define this region and what a treat to combine the two making this outstanding Speedy Louisiana Crawfish Jambalaya, from my Gulf Coast Favorites cookbook! Cajun flavor, combined with Louisiana crawfish, reduced-fat smoked sausage, and served over rice is a favorite meal in my household. Try using brown rice to easily boost fiber, because 1 cup of rice equals less than 1 gram of fiber, while 1 cup brown rice equals 3 grams of fiber.

Speedy Crawfish Jambalaya from Gulf Coast Favorites cookbook
Talk about easy, and talk about good, this Cajun flavored recipe is great served over rice.
Makes 4- 6 servings
1 (16-ounce) jar chunky salsa
8 ounces reduced-fat smoked sausage, diced
1 cup Louisiana crawfish tails, risnsed and drained
1 teaspoon dried thyme leaves
1 bunch green onions, chopped
- In large nonstick skillet, mix salsa, sausage, crawfish, thyme and 1/3 cup green onions. Bring to boil, reduce heat and cook 10 minutes. Serve the jambalaya over rice.
