Yeast Free Hoppin John

I was in a funk last week and not at all prepared to begin a New Year.  I guess I forgot how exhausting working retail can be during the holiday season.  Working crazy and inconsistent hours through December and trying to still spend some quality time with my children during their 2 week holiday break proved to be difficult.  This left me feeling rather undone on New Year’s day.  I was feeling better by Friday, January 3 and anxiously anticipating getting back to a normal routine.  Unfortunately, this feeling didn’t last for long.  Around mid-day on January 3rd I had to rush my mother to the hospital.  She had a urinary tract infection so severe that it actually impaired her cognitive functioning.  She was not able to form sentences and my brother and I were worried that she may have had a stroke.  Fortunately after 3 days of  intravenous antibiotics and numerous tests to rule out other causes she is much better.  Things have been hectic but with my work hours back to normal, the kids back to school and my mom on the mend I am finally ready to take on 2014.  So where do I start? What better way to start a new year than with a new Yeast Free recipe.

 

I decided on Yeast Free Hoppin John as my first new recipe for 2014.  Hoppin’ John is a soup that originated in the Southern United States.  The main ingredients in Hoppin’ John are black-eyed peas
