Vanilla Protein Pumpkin Muffins Recipe

Pumpkin is one of my favorite flavors of the fall season. And what better way to enjoy Pumpkin than with a healthy protein muffin recipe?

When it comes to nutrition, pumpkin is a pretty healthy vegetable to include your diet. The meat of a pumpkin is high in Vitamin A and rich in flavonoid poly-phenolic antioxidants like leutin, xanthin, and carotenes.

Pumpkin is also low in calories, contains no fat, and is super high in fiber. Fiber is an incredibly important ingredient to get more of on any weight loss plan. Not only does it keep you feeling full because it expands in your stomach, it also burns more calories during digestion, so it’s a great boost to your metabolism.

A good dose of protein is the only thing missing from this powerful member of the squash family. So to even things out, I’ve come up with a delicious, healthy recipe for Protein Pumpkin Muffins. You’re going to love this one…

Vanilla Protein Pumpkin Muffins Recipe

These muffins are super easy to make and require only a handful of ingredients. Here’s what you need to make 2 of these healthy, delicious pumpkin muffins:

  • 250 grams of pumpkin puree (the canned stuff works well)
  • 1 egg white
  • ½ teaspoon of pure vanilla extract
  • 2 tablespoons of quick oats
  • 1 teaspoon of baking powder
  • 1 scoop of Delicious Vanilla flavored Gaspari Nutrition Myofusion or Vanilla flavored Optimum 100% Natural Whey

Here’s what you need to do to bring it all together:

Preheat your oven to 350 degrees Fahrenheit. In a large mixing bowl, mix together the pumpkin puree, egg white, vanilla extract, baking powder, and vanilla protein mix. Once incorporated, stir in the quick oats.

Grab a muffin tin or use 2 mugs, make sure they’re greased with a little bit of spray cooking oil, and fill up 2 muffins’ worth with the mixture. Place on the middle rack of the oven, and bake for about 30 minutes or until toothpick comes out clean.

If you want something to top these pumpkin muffins with, try using fat-free Greek yogurt. Mix it with a little bit of stevia or honey and a dash of vanilla extract for a sweet and tasty addition, or even stir in a bit of coca powder for a chocolate twist.
