This is getting to be my favorite time of year. Well one of them anyway. In another couple weeks it will be Cherry picking time! I love making cherry pie filling, and whatever other recipe I can find for cherries. It’s actually strawberry picking time. It’s been raining so much here that we haven’t been able to go. Hoping to go on Tuesday.
A couple weeks ago we went to a place called Pine Crest Historical Society. It was a place with old buildings and other things to see. We decided to stop in the gift shop before we left and I picked up a little book called Old Fashion Muffin Recipes. I stumbled across this recipe and decided to make it tonight. I wanted to bake with my daughter but she had a fit because it was cherry. Sigh…. So I had to bake on my own.
Mmmmm nothing like a little melted butter on a warm muffin!!
Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1/3 cup vegetable oil
- 2/3 cup milk
- 1 cup Maraschino Cherries, drained, chopped
Instructions
- Combine dry ingredients in a mixing bowl. In separate bowl blend egg, vanilla, oil, and milk. Stir in cherries. Pour liquid mixture over dry, stirring with several quick strokes to moisten and combine. Spoon batter into greased muffin cups. Bake at 375 for 20 - 25 minutes.
