Father’s Day in Estonia is always celebrated and observed on Second Sunday of November each year. So, Happy Fathers Day!!!
And lets bake one cake for all fathers
This is “retro” cake. A Sour Cream layer cake with a topping made from chunks of white cake mixed with sour cream that looks like a curly hairdo (kräsupea). This cake from times, when in stores were nothing.
My cake look very decent ( to get better photo ). I did not made last layer from cake cubes but as usual layer.
For lazy people tip: you can use just cookies and do not waste time for baking layers.
For better result leave cake to set overnight.
Simple and delicious cake
Ingredients
- 4 eggs
- 4 dl sugar
- 6 dl flour
- 1 teaspoon baking soda
- 3 tablespoon cacao
- 400 g sour cream (Smetana, creme fraiche, Greece yoghurt)
- 1 kg sour cream
- 2 tablespoon cacao
- 2 tablespoon sugar
- hot water
For cream

- Mix together whipped eggs, sugar, flour and baking soda. Add sour cream.
- Split dough in to two parts
- Bake one part in the oven at 180C for 25-30 minutes
- In to the second part of dough add cacao, mix well. Bake at oven 180 C for 25 minutes.
- Cool down.
- Cut light biscuit in to the 1,5 x 1,5 cm cubes and mix with sour cream
- The bottom layer is half of the brown biscuit, cover with sour cream mixed light biscuit cubes.
- For cream. Mix together cacao and sugar and add as much hot water to get fluid consistent. Pour cake over
- Leave in the fridge overnight to set.
