Has anyone tried Red Mushroom before? I had my first experience with red mushroom at PUTIEN. If you have missed the previous seasonal or Mother’s Day menu with red mushroom, don’t miss it this time. The Red Mushroom is a limited time menu (Red Mushroom Tea, Double-boiled Chicken Soup with Red Mushroom and Braised Beancurd Skin with Red Mushroom) which runs from 1st September to 30th November 2018. And cheers, it is available at all PUTIEN restaurant across all outlets, island-wide. Check out the locations below!

Red mushrooms, all hailed from Mount Wuyi of the Nanlu mountain range and located in the Changting County of Longyan City in Fujian. It is only available for picking for only four hours in the early mornings of summer and has various conditions to meet in order to cultivate. Do you know that each red mushroom blooms then withers within a day? The red mushroom is also very shy to human, sensitive to sounds and ‘shrink back’ upon sensing any human activity. Thus, the quantity of red mushroom is very limited. Glad that we are able to enjoy not just one but the triple treat of the precious red mushroom at PUTIEN islandwide.

The red mushroom tea! Often mistaken as mushroom soup. In fact, the taste is similar to mushroom soup, less the soy sauce. The natural red pigment from the red mushroom dissolves into the water, leaving the mushroom to brownish-red. Check out before and after in my photos!

One of my favourite red mushroom dishes – Double-boiled chicken soup with red mushroom. Using one whole chicken boiled for four hours at low heat, then simmered with red mushrooms. Something unique about this chicken is that they have a white body but black feet, can someone share with me the type of chicken breed? I like the natural sweet goodness with this simple yet nourishing pot of chicken soup in a beautiful rose colour with chunky red mushrooms to bite. Good for sharing among 4-5 pax.

The homemade beancurd, beancurd skin together with PUTIEN seasonal clams, scallops, dried shrimps and red mushrooms are slowly stewed in a hearty pot. The beancurd skin is very soft and smooth while the homemade beancurd is chunky. Overall, a light dish to have and I personally prefer adding an umami light soy sauce to bring out the intensity of flavours.

If you like PUTIEN seaweed appetiser, you’ll like this soft seaweed and mini shrimps dressed with sauce.

Chilled bittersweet loquat in herbal jelly with traditional Chinese herbs is simply refreshing to have after a meal.
