Fruit Layered Chia Seed Pudding

I am all about this Chia seed craze that has been going on the last few years and I am proud to take every opportunity to incorporate these seeds into all types of recipes – drinks, desserts, and smoothies (like this mango pineapple tropical smoothie bowl). So, it’s no secret that creating recipes with this SUPERFOOD ingredient is kind of a pure joy. You know what else is a pure joy? This fruit layered Chia Seed Pudding right here.

One of my favourite ways of eating chia seeds is in a chia seed pudding. I eat it stuff for breakfast or lunch. But when I top it up with tons of fruits, it starts to look like a pretty good dessert to me. And a super healthy one at that! It’s probably one of the healthiest ways to satisfy a sweet tooth. This superfood is full of protein, fiber and antioxidants, so you won’t feel guilty having seconds!

Plus, you will be happy to hear that making Fruit Layered Chia seed pudding is actually super easy!! Chia seeds, when combined with liquid, form a gel-like substance that is similar to the texture of pudding. So all you need is to combine chia seeds with milk (I used almond milk to keep this recipe vegan) and set it aside to thicken for 15 minutes and then add some sugar to sweeten it up. Add a fruit layer and top it up with fresh fruits or nuts, whatever is in season!

I added an orange layer and topped it up with a combination of four fruits to create something more colourful and delightful to enjoy with my eyes as much as my taste buds! I also tried to arrange the kiwi slices on the sides of the jars to make it even more eye-catching, but to do so make sure your kiwi is really thinly sliced.

So since it is so easy to prepare this chia pudding, it only makes sense that it is also perfect for entertaining! You already know that it is so easy to make so it takes almost no time to prepare and it’s super pretty. Plus, you can easily make a bigger batch by doubling or tripling the recipe. AND you can make the chia pudding made ahead of time! This pudding will last (if covered) for a week in the fridge, so try making a big batch to last you a couple of days.

Description

Jump on the chia seed craze with this delicious, gluten-free and vegan fruit layered chia seed pudding! It’s the perfect healthy breakfast or dessert, and is full of protein, fiber and antioxidants, so you won’t feel guilty having seconds!


Ingredients

Chia Pudding Layer:

  • 1 cup almond milk
  • 1 teaspoon cane sugar
  • 2 tablespoons chia seeds

Orange Layer:

  • 1 orange, peeled and cut into small pieces
  • 2 tablespoons cane sugar

Toppings:

  • 1/2 grapefruit, peeled and cut into small pieces
  • 1/2 orange, peeled and cut into small pieces
  • 1 kiwi, peeled and sliced
  • 2 plums, sliced
  • 2 tablespoons pecans

Instructions

  1. Add milk and sugar into a small saucepan over a low heat. Stir until sugar is dissolved and the milk is warm (but not boiling). Remove from the heat. Add chia seeds and stir. Set aside for 15 minutes and stir from time to time. The pudding will thicken.
  2. Prepare the orange layer. Place the orange pieces and sugar into a small saucepan. Heat over a low heat and cook for 5-7 minutes. Remove from heat and blend until smooth, using an immersion blender.
  3. Prepare two large glasses or jars and start layering your dessert. First add a layer of chia pudding, then the orange layer, then another layer of chia pudding, and assorted fruit on top. Finish everything with pecans, and serve.

Notes

  • You can substitute almond milk for any type of milk you have on hand – regular, almond, soy, hazelnut, coconut, rice, etc.
  • You can substitute sugar with any type of sweetener you have on hand – honey, maple syrup, etc.
  • The chia pudding layer, if covered, will last for a week in the fridge.
