This is my husband's favorite thing I make, and he always asks for it when I make him his birthday brunch. You can pretty much pick and choose your favorite Fruit. I change the fruit depending on what is in season or looks ripe and fresh at the store. The thing that makes this salad is the syrup. The haunting essence of ginger with the tart taste of lime is amazing with all the fresh fruit. The more floral your honey-the better! Especially if you get your hand on a star fruit. Starfruit is so floral and unique, it pairs well with floral honey.
I love serving this with vanilla yogurt and granola. The salad keeps for a day or two, so we like it as dessert during lunches, or dollop it on top of ice cream for dessert. As the fruit sits in the fridge, it will break down and get really syrupy, making it really great for dessert or pancake topping. SO get creative with it!
Lime and Ginger Fruit Salad
Ingredients:

1-pint of strawberries, hulled and sliced
1-pint blueberries, rinsed and picked through
1-pint blueberries, rinsed and picked through
2 kiwis, peeled and sliced
pineapple chunks, 2-3 cups
1 can mandarin orange slices
1 ripe mango, chopped
2 cups seedless grapes
star fruit, sliced if available
Sauce:
1/2 cup water
1/2 cup honey
2 Tbsp. sugar
1 2" slice of peeled ginger root, thinly sliced
pared peel and juice of 2 limes
dash of salt
1/2 cup water

Directions:
Mix all your fruit in an airtight container. In a small saucepan, heat your water with sweeteners and juice, ginger and peel. Simmer until slightly thickened. Strain and cool to room temperature. Pour over the fruit, and mix. If you can, let it sit in the fridge for a couple of hours. Serve chilled with the yogurt and granola.
