Amritsari Paneer Bhurji | Scrambled Cottage Cheese By Asha Mehra

Amritsari Paneer bhurji or scrambled Cottage Cheese recipe of Amritsar, Punjab is famous among Punjabis. I remember very well, this is sometimes 20 years back when I used to visit my nanny at Amritsar on summer vacation, I used to eat this paneer bhurji in the evening, Oh…it was so filling that it was next to impossible to eat this one plate of it.

Amritsari Paneer bhurji is the best made at “Katra Jaimal Singh” famous for its shopping opportunities and some of the best foods in the world. One cannot believe that loads of butter they put in this paneer bhurji. One can actually feel the sip of butter along with a mouthful of this bhurji.

This dish is made from fresh cottage cheese and some simple spices and with a lot of butter. The taste of this dish is amazing when eaten with bread (with butter). One thins is not changed since my childhood, that the brand Amul butter, till today they use this butter for the same taste, that to the same quantity.

So let’s prepare this authentic Amritsari Paneer bhurji, “Katra Jaimal Singh” style.

Ingredients

  • 250 gm fresh cottage cheese crumbled
  • 3-4  chopped green chilies
  • 1 large onion finely chopped
  • 2 medium sized tomatoes chopped
  • 1 pinch turmeric powder
  • 1/2 tsp Punjabi garam masala powder
  • 1 tsp red chili powder
  • Salt to taste
  • Minced ginger
  • 100 gms Amul butter

Method 

In a heavy bottomed skillet, add the 50 gms of Amul butter. Once the butter begins to heat up, add the chopped chilies. Saute for a minute.

Now,  add the chopped onions and minced ginger. Saute them till they start getting little golden brown towards the edges. Now add all the spices, Punjabi garam masala, and salt. Saute for another 30 seconds or so.

Next, add the tomatoes. I like to add around 1 tbsp of the cottage cheese water. You can add regular water if you like. Cook the whole thing for 2-3 minutes, till the time the tomatoes lose their edges and become soft.

The secret to soft paneer bhurji is adding the cottage cheese at the very last moment. Cottage cheese (Paneer) is naturally spongy and in this crumbled state, it absorbs all the spices and garam masala very quick. Stir around for 2-3 seconds and turn the flame off!

That’s it. Your Amritsari Paneer bhurji is ready! Make it for any purpose, evening snacks or dinner, and tell me how it went for you.

That’s not finished yet, we have to prepare butter bread to eat with this.

In a bottom skillet, heat two slices of white bread, keep flipping till some edges become slightly brown. Now add the 50 grams of remaining Amul butter between the two slices and heat it, till all the butter is melted in those bread slice.

So finally your Scrambled Cottage Cheese, “Katra Jaimal Singh” style is ready to serve. Though this is not a very healthy dish, with so much of butter, sometimes you can pamper yourself and have this heavy, full of butter, paneer bhurji.
