CHORI-QUESO FUNDIDO (MEXICAN MELTED CHEESE WITH CHORIZO)

I love chori-queso fundido (Mexican melted cheese) for an easy, comforting dinner party starter. It’s moist on the inside and crispy on the outside with a vibrant smoky flavor.

Every time I make this classic Mexican recipe is such a success with my friends and visits that I have called it “the happy Mexican dish”. No matter what is going on in your life it will always makes you smile. I promise you!

Queso fundido is the Mexican version of the original Swiss fondue. It is originally from the state of Nuevo Leon (Northern of Mexico) where it’s also known as queso flameado (Flamed cheese).

Make it taco

Chori-queso is gorgeous if you eat it in a taco with warm flour or corn tortillas. Simple as that! It’s even more enjoyable if you add a touch of some Mexican salsa. In my next post, I’ll share with you a very delicious salsa recipe that makes a perfect match with this dish.

Another wonderful way to enjoy your choriqueso is with corn chips. I highly recommend to buy your corn chips and corn tortillas from La tortilleria from Melbourne, they have great quality and flavor. For flour tortillas, an excellent brand to buy is La Banderita, which are available at IGA supermarkets. This tortillas are my favorite because they taste just like the ones in Mexico.

Our recipe

The recipe I sharing today was passed to me from my mother-in-law (Olga), who is from Monterrey, Nuevo Leon. She makes this dish absolutely amazing.

My mother-in-law  melts the cheese over the stove but it can also be done in the oven as I prefer to do it because I love the crispy crust on top the cheese. Either way it’s quick, easy and very tasty!

Something that I really like about this recipe is that you can always prepare the chorizo mix in advance and it will save you some time in the kitchen. Then, you just need to add the mix on top the cheese and bake it some minutes before your guests arrive. Easy!

Get only the best quality ingredients

As cheese and chorizo are the main players on this dish, I strongly suggest to buy the best quality in the market because it’ll really make a big difference not just in flavor but also in texture.

My favorite chorizo brand here in Sydney is La Boqueria. I always buy hot chorizo but there is also a mild version available if your prefer. You can find this chorizo brand in many delicatessen stores around Australia but check their website for more info.

If you are reading this post from any other part of the globe, just look for any premium Spanish or Argentinean style chorizo to make this recipe. If you can find Mexican chorizo it will be even better.

In regards of the cheese, any top quality cheddar style will work very well.

Hints & tips: To make choriqueso over a gas stove use a metal heat-proof plate. The cheese will be ready when it is completely melted and bubbling.

This choriqueso fundido is a great Mexican appetizer for your dinner party. It'll impress absolutely anyone!

Serves: 6 medium size tacos
Ingredients
  • 400 grams tasty cheddar cheese, grated
  • 150 grams La Boqueria chorizo, finely diced
  • 2 tablespoon white onion, finely chopped
  • 2 medium fresh tomato, finely diced
  • ½ teaspoon olive oil
  • Pinch of salt
  • 6 Flour or corn tortillas to serve
Instructions
  1. Preheat oven to 180c.
  2. Place the cheese in a medium crystal, ceramic or metal heat-proof plate. Set aside.
  3. Heat oil in a saucepan over medium-high heat.
  4. Add onion and cook until tender, it takes around 2 min.
  5. Add chorizo and a pinch of salt. Cook until slightly crispy; it will take about 5-7 min.
  6. Add tomato and cook for 1 min more until slightly soft. Remove from heat.
  7. Place chorizo mix on top the cheese plate.
  8. Transfer to the oven and bake uncovered for about 7-10 min or until cheese is melted, brown and crispy on top. Remove cheese from oven.
  9. Transfer to a table dining and serve immediately with heated flour or corn tortillas as well as with your favorite Mexican salsa.
  10. Let everyone build their own queso fundido tacos. Enjoy!
