Healthy Recipe: Baked Eggs and Chicken with Spinach Breakfast Burritos

Eating healthy doesn’t have to be a time consuming proposition – and can be tasty as well! This healthy recipe for Baked Eggs and Chicken with Spinach Breakfast Burritos is easy to make, and has great flavor as well.

Baked Eggs and Chicken with Spinach Breakfast Burritos            

  • Whole Grain or whole wheat tortillas
  • 6 Eggs (or egg white substitute)
  • 1 cup chopped chicken breast
  • 1 cup frozen spinach, defrosted
  • ½ cup low fat shredded cheese
  • Olive Oil

Preheat oven to 350 degrees. Crack eggs into a medium mixing bowl and beat gently. Drain any water from the defrosted spinach, and add it to the eggs, and also add the meat and cheese and mix well. Grease a 8×8 square baking dish with the olive oil. Pour egg mixture into dish and bake for 30 minutes. Remove and cool.

Once cool, slice frittata into 6 rectangles, and place one slice of frittata on one half of one tortilla. Fold the three sides of the tortilla toward the slice of frittata and roll over, making a burrito. Repeat for remaining 5 slices.

Burritos can be wrapped in plastic wrap and kept in the refrigerator. To serve, microwave for 1 minute.
