Happy Pancake Day!

It is pancake day -–> literally one of my favourite days, ever.

I absolutely adore pancakes but I never really find the time to make them -–>I’ve tried to batch make them before and freeze them but they’re just not the same. I also find it really difficult to make healthy pancakes that still taste like pancakes -–> yes I’ve tried the two ingredient pancakes but I’ve never been able to make them work -–>I just end up with banana scrambled egg.

I found this pancake recipe and I thought I would give it a go -–> I like that it’s low in calories but high in Protein -–> 335 calories and 25g of protein for the WHOLE recipe. It also uses natural protein sources rather than powders -–> I use protein powders a lot but I like to get protein from natural sources as much as possible so this was a huge bonus to me. Plus the recipe is so simple, it uses 3 main ingredients AND it doesn’t use anything complicated!

For one serving i.e. the whole recipe you’ll need:

  • 2 eggs
  • 40g oat flour (don’t buy oat flour, it’s so easy to make -–> get 40g of oats and blend them up = homemade oat flour in 3.2 seconds)
  • 100g Greek yoghurt – I used 0% fat for this

You can also add vanilla or an extra sweetener such as stevia or honey if you want, it’s completely up to you! You’ll also need some oil for cooking.

To make them:

Put the eggs, Oat Flour, Greek yoghurt and any extra flavours into a bowl

Whisk until light and fluffy

Put the pan on a medium heat with the oil and pour in small amounts of the mixture -–> I managed to get 6 out of the mixture

Cook each pancake for 2 -3 minutes before flipping and placing on a plate -–> start stacking them! The first one looked a little anemic but they got better from there – my favourite one was the bottom right –> if only I could get them all to look like that.

Top with your favourite toppings and enjoy. I stuffed mine with peanut butter and toasted banana and topped it with blueberries and a little more greek yoghurt –> perfection!
