Liquid Nitrogen ice cream reacts in a way that produces a fire breathing dragon effect when eaten. It’s a fun treat that is pleasing to the eyes and mouth. Why is this treat such a hit? The recipe takes a traditional dessert and makes it modern and exciting. Want to adopt this futuristic technique to your menu? Read on to discover how you can execute a homemade batch of liquid nitrogen ice cream.

Here’s what you’ll need:

  • 1 quart (32 oz.) of half and half (or heavy cream)
  • 1 pint (16 oz.) milk
  • 3 tablespoons of vanilla
  • 1/2 cup of sugar
  • 5 liters of liquid nitrogen
  • Large stainless steel mixing bowl
  • Wooden mixing spoons
  • Heavy-duty gloves
  • Safety glasses/goggles
  • Plastic sheet to cover the mixing area just in case you spill

Where do I get liquid nitrogen?

As you can probably guess, liquid nitrogen is not something that you’re going to find at your local supermarket or convenience store. Your best bet is to find an establishment, science department or laboratory that works with industrial services and supplies, since liquid nitrogen is a substance that isn’t regularly used for cooking operations. However, if you plan on using a dry ice substitute, you can most likely find that at a local grocery store.

Instructions

  1. Set up your workstation with your ingredients on hand. Then put on your protective gear.
  2. Mix your dry and wet ingredients together in your mixing bowl and begin to blend the flavors together.
  3. Carefully add the liquid nitrogen to your mixture in increments. Continuously stir as you add the substance to your bowl until all parts are equally frozen.
  4. Portion and serve to your liking. Enjoy!

Things to Remember

  1. Liquid nitrogen is 320 degrees below zero and can cause frost burns to skin. Wear your protective gear at all times when handling the substance.
  2. Liquid nitrogen ice cream should be served as soon as it’s prepared, otherwise your creation can turn black. But if this should happen, you can add more liquid nitrogen to refreeze your ice cream.
  3. Before you purchase liquid nitrogen, research the proper transportation/handling, containing and storage practises to avoid an accident.
