Absinthe Valdetra Verte tasting notes by Marc Thuillier

Absinthe Valdetra Verte is distilled by Gaudentia Persoz in Couvet, Val-de-Travers. There are still not many green absinthes in this Swiss region, and the road has been quite long to get there. In fact, only clear absinthes were clandestinely distilled there before the lift of the ban in Switzerland in 2005, simply because it required less herbs and less time than for making a Verte. The first green absinthes that popped up in the Val-de-Travers were sometimes not really pleasant to drink… Let’s see how they are today.

Color: very nice bright peridot green.

Aroma before water: a blatant Bleue in the background, enhanced by notes of citrus fruits, flowers and grand wormwood.

Louche: beautiful turbulent clouds in the bottom of the glass, right from the start of the process. The louche is then quickly opaque.

Aroma after water: rather muted after water is added, nothing really comes out prominently from the glass.

Taste: grand wormwood is immediately being noticed, with an anise background. Then come yummy fruity flavors, and a persistent bitterness. Lots of herbs are rushing on the palate, including a powdery – as expected – hyssop, a lemony melissa, or a rich fennel.

Final: the bitterness stays stuck to the palate for quite a long time.

Conclusion: a Verte of great character! And this is not really common in the Val-de-Travers. Valdetra Verte is smooth to drink, but at the same time full of little concealed secrets which – partially – unveil themselves sip after sip. For experienced connoisseurs who will take their time to unveil its little secrets, but also for beginners who want to experience a green Swiss absinthe in which Artemisia absinthium is brought to the fore.

How to drink absinthe Valdetra Verte

Well, this is a bit paradoxical because enjoying it without sugar will make it explosive and straight-forward, while enjoying it with sugar will make it round and less bitter. 2 different profiles, it’s up to you to decide, but I would suggest tasting both with and without sugar to see which aspect of the Valdetra Verte you prefer…
