Peanut Butter Cup Cookies Recipe

Looking for an easy but delicious dessert that everyone will love?  Then, look no further!  These Peanut Butter Cup cookies are both delicious and easy to make!  I took them to a potluck and of course there weren’t any left on the plate…who can resist Reese’s cups??

When my girls seen the empty plate they were a little disappointed but they were happy to hear that I kept a few back at home just for them.

Ingredients:

  • 1 3/4 cups AP flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 stick of butter softened (1/2 cup)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 Tbs milk
  • 40 Reese’s peanut butter cups, unwrapped

Directions:

  1. Unwrap bag of Reese’s peanut butter cups and place in freezer.
  2. Preheat oven to 375 degrees.
  3. Sift or whisk AP flour, salt and baking soda together in a bowl.
  4. In a mixing bowl cream together butter, peanut butter and both sugars until fluffy.
  5. Mix in vanilla, egg and milk until smooth.
  6. Add flour mixture and mix well.
  7. Shape into dough into approximately 40-48 balls.
  8. Place balls in ungreased mini muffin pan.
  9. Bake at 375 degrees for 8 minutes.  Do not over cook!  They will look like they aren’t done, but they are

Take Reese’s cups out of freezer, remove cookies from oven and press a peanut butter cup into each cookie.*I let the cookies set for approximately 30-45 seconds after coming out of the oven to let the top of the cookie sink in just a bit, then I press the peanut butter cup in each cookie.  This helps prevent the cookie edges from cracking.
  11. Let cool approximately 15 min, then remove from pan to cool completely.  I put mine in the refrigerator to cool faster.
  12. Store in an air tight container.
